Well technically (I'm putting my geographer hat here)Turkey still belongs to the South and isn't developed yet, but yes Istanbul is the most westernized and developed part of the country. However with the growth of Muslism fundamentalism over there for the last 10 years, there's a bit of social regression even in Istanbul.
According to my experience looks like the amount of tourists doesn't change the way locals stare. I know it's weird.
Did you visit Topkapi Palace? Don't you think that the mosque of Suleyman the Magnificent is nicer than the Blue Mosque?
